Newspaper Tacos

What’s black and white and read all over? (yuk, yuk) You guessed it, a newspaper! Well, we’re gonna fix a tasty lunch or dinner item that’s got that black and white and red thing goin’ on too, and that’s why my little critter dubbed this dish newspaper tacos. So put yur USA Today away, we won’t be usin’ it for this dish!

 

– 3 corn tortillas

– Cooking spray

– 1 can of black beans

– 1 roma tomato

– 2 tbsps crumbled feta cheese (or shredded cheddar if yur a weenie)

– Salt n pepper to taste

 

Ok, a fore we git started, a word er two about some of these here ingredients. Corn tortillas keep for dang ever in the fridge. Yur only gonna use 3 in this recipe, but you can eat this once a week and keep on using those tortillas until the whole package is gone – even if it takes two months! One can of black beans will last you for two servings of this recipe. So if yur making this for you and a friend, double all the other ingredients, but you’ll just need that one can of black beans. If yur solo, put that other half can of black beans in a little plastic tub and save it for next week. Don’t be scared to try feta cheese. I call for crumbled feta, but you’ll get a better buy if you purchase a block of feta and crumble it yurself. Just slice off a bit from the block and crumble it up.

 

Here we go. Cut up yur tomato into small chucks (heck, no it dudn’t need to be a Roma, but those’re just the right size for one serving of this recipe and I like their flavor).  Crumble yur feta and have both those things ready to go on a cuttin’ board or a plate. 

Heat a large skillet or griddle over medium heat. Spray both sides of yur tortillas with cooking spray and plop all three of those tortillas on the griddle. A little overlap iddn’t gonna hurt anything. While those are warming, about 90 seconds on each side, open up your beans and heat em up either in a small pot or in a microwave safe bowl (3 minutes in the microwave will be about right.)

Remove yur tortillas to a plate and then load each of em up with a scoop of hot, drained beans (meaning you don’t want a bunch a bean juice on yur tortilla!), a third of the mater and a third of the cheese. Sprinke salt and pepper and maybe a bit of cumin too and yur ready to eat. 

What? Did you think this was gonna take all day? Girls, this is fast, fancy, yummy and healthy. You just gotta try it!
